One of my favourite pastimes is to escape to the country. I love eating foods that remind me of sunny days and time in the garden. I used to hate peas as a child, but when eaten fresh they taste sweet and fresh. The balsamic sticky glaze offers this salad a lift that brings together all the ingredients.
This is great as a light snack or side salad. Add a wholegrain like quinoa or black lentils for a more filling dish of you want to have it as a main meal.
Combine these ingredients in any quantity according to your taste
- Chopped green leaves like baby spinach and rocket
- Fresh peas
- Chopped strawberries
- Chopped cucumber
- Chopped red onion
- Mozzarella or marinated Tofu (optional)
- Balsamic glaze and a sprinkle of fresh chopped mint
Chop your ingredients, combine in a bowl and mix well. Top with the mozzarella or tofu, and finish with a drizzle of sticky balsamic glaze. Serve and enjoy!
